Lunch Inspiration

For a long while now I've been making "funny lunches" for Cate. It all began when she started becoming extremely selective about what she would and would not eat (2.5 years maybe). I'd been reading about bento boxes and thought we could sorta make our own at home. I use a muffin tin pan (with 6 spots) and fill them each with a small portion of different food. I try very hard to touch each food group. The rule is, if she finishes everything she can chose to have more of anything. Here are some examples from the last couple of weeks:

Green apples, sugar peas, frozen berries, one square of peanut butter and honey, white cheddar, and baby carrots
Mini carrots, plain yogurt, (there were dried plums but they were devoured before the picture was taken!) almond butter wedges, leftover chickpeas and spinach, and strawberry pieces.
 Carrots and green peppers, cheese toast, hemp and flaxseed tortilla chips, trail mix, hard boiled egg and pear.
 Fruit leather, chickpeas, brown rice, broccoli, banana slices, peach slices.

 Whole grain pasta, pineapple, orange, chicken fried barley, plain yogurt and edamame beans
Peaches, yogurt and applesauce with cinnamon, scrambled eggs, whole wheat macaroni, homemade pumpkin seed banana bread, steamed broccoli.


And here she is, enjoying the funny lunch goodness. yum.

  3. I tried this with Addison and he LOVED it! He was so excited and said it was the best meal ever! I'll have to do it again - thanks for the great idea, Carmen :)
